RECIPE: Roasted Beet Salad With Horseradish Cream Dressing

This was great! My horseradish was getting old and I think may have lost some of its kick so I added quite a bit more than the recipe called for, tasting after each addition. Approximately 3 tablespoons all together. It was delicious! Can't wait...
