I've been in Japan for more than 8 years now, and I love it. I also love the cooking - very focused on presentation, so very relaxing to prepare.
I've just become a Premium member, and am in the process of putting together my own "Japanese" cookbook, which I hope to share!
Everything greasy, salty, fatty...
Ha!
But I also love the subtle, non-fatty tastes of Japanese delicacies, such as sashimi.
