Warm Chickpea Salad With Ginger

This Moroccan salad is often served warm with grilled fish.

SERVES 4 (change servings and units)

Ingredients

    Heat 1 tablespoon of the oil in a frying pan over medium-low heat. Add the onion and garlic & cook gently for 5–7 minutes until soft and transparent.
  2. 2
    Add the chickpeas, ginger, and chili flakes and stir for about 30 seconds. Then add the lemon juice and let the mixture bubble until almost dry. Next add the cilantro and season to taste with salt and pepper.
  3. 3
    Place the chickpea mixture into a serving bowl and pour over the remaining olive oil. Sprinkle the cumin and paprika on top, gently stir then serve warm.

Wow this was really yummy. What a nice salad idea. I didn't have powdered ginger by itself by I used a ginger mixed mideast spice and added some shredded carrots that I had to use up and it came out really good me and my hubby both enjoyed. When I first tagged this I didn't realize it was a "warm" salad and that makes all the difference. I think you have to put it in the title Thanks. Made for Ramadan Tag 2008

    One Word - AMAZING! This Salad is so simple, basically just chickpeas and red onion, marinated in olive oil. But it tastes amazing. Unbelievably healthy as well! I will definately be making this again.
