Teetering Tomato Soup

"Found em!" I shouted to anyone that might be hovering near the country road mile we live on. A light rain shower just started, and there I was standing in the garden hunting down the last tomato that might be hiding. I found a couple of tomatoes nestled down beneath the sweet potato vines, large pepper plants leaves, and the numerous weeds that had continued to sprout even in the cool Fall weather. Mud was already caked to my old garden crocs, and my hands were also full of mud. Dexter the Mastiff sat quietly beside me, and was trying to stare down a brown caterpillar that was making it's way slowly across the earth. I turned, quickened my step down the dirt road with the dog beside me, carrying a half of dozen various sized tomatoes tettering in my arms and trying not to drop any along the road to home. I really wanted some tomato soup, and I just knew it would warm me up and Dex too. This recipe uses canned tomatoes, or you can use fresh ones too, like I did. I just peeled the tomatoes, put em' in the pot and went right along with the recipe from there. This recipe was loosely adapted from Cooks Illustrated.

    Heat 2 tablespoons oil in a soup pot, warmed over medium-high heat.

    Add onion, bay leaf, and garlic.
  3. 3
    Soften vegetables for 3 minutes.
  4. 4
    Add tomatoes and their juice.

    Mash up tomatoes with spoon of potato masher.
  6. 6
    Stir in torn bread.

    Add the Italian seasoning or oregano.

    Bring to just below a boil, reduce heat to med/low and cook till warmed, (not boiling).

    Add salt and pepper to taste.

    Remove bay leaf.

    Carefully scoop 3/4 cup tomato mixer out and run through a blender for a couple of seconds until mixed. Put pulsed tomato mixture in a bowl until all the tomato mixture is pulsed. (or use a hand mixer in pot).

    Warm again to piping hot in soup pot, dish into a cup to carry around with you, or in a soup bowl. Add toppings as desired. Drizzle with oil as desired.

This is super! I have never had any tomato soup but canned. Thank you for sharing this recipe!! :D I think I might use cream or evaporated milk in place of the broth or some of it. YUM!!

    I made this with Aldi's Italian tomatoes (VERY fleshy and flavoursome), my Vegetable Stock and I doubled the onions (Andi did say one didn't have to be exact: ah, as a very inexact chef, just my sort of recipe!) and I used 4 cloves of garlic. I also added some basil. I included the chopped fresh chives but not the red pepper flakes (personal taste preference). My challenge in making this was to make a soup that my 85 year old mother - who declares herself not to be a "soup person", whatever that means! - but loves tomatoes, very much more than I do, would love. And Andi, this recipe, she willingly agreed - or did I co-erce her into saying that? - shifted her 85-year-old-prejudice! She loved it! So I guess I'll be making it again! Well she did agree to that! Thanks for sharing another super, soup-er recipe! Made for PRMR.

    Another comfort food recipe for my Favorite Recipes binder! Delicious, easy to make soup! I used a thick slice of white homemade style bread whizzed in my mini food processor, canned chicken broth, and Italian seasoning. Garnished top of each serving with fresh chopped green onion (no chives on hand), red pepper flakes, and about one teaspoon of olive oil. Served it with a grilled cheese and bacon sandwich. Loved the story with the recipe. I could just picture you out in your garden with Dexter and it made me smile. Can hardly wait until next summer when fresh tomatoes are available from my garden; however, if I can not wait I will watch for those on-the-vine tomatoes or plum tomatoes on sale and try it with fresh tomatoes too.
