Swiss Miss Fat-Free Tapioca Pudding (Copycat)

I found this recipe about five years ago on topsecretrecipes.com, but had forgotten about it until I tried mariposa13's Ww 3 Points - Swiss Miss Fat-Free Chocolate Fudge Pudding. With one can of fat free sweetened condensed milk, you could make both recipes and have lots of healthy treats! You'll never miss the fat!

SERVES 4 (change servings and units)

    Combine the cornstarch with the fat free milk in a medium saucepan and whisk thoroughly to dissolve the cornstarch.

    Add the sweetened condensed milk, salt and tapioca to the pan. Stir until smooth and then set the pan aside for 5 minutes.

    After 5 minutes, bring the mixture to a boil over medium low heat, stirring constantly until it thickens, then cover and remove from heat. Let the pudding sit, covered, for 20 minutes.

    Stir in the vanilla, then transfer the pudding to serving cups. Cover the cups with plastic wrap and let them chill for at least 2 to 3 hours before serving.

I have never tasted Swiss Miss Tapioca Pudding. This one tastes great but is a bit too sweet. It took a lot of time to do it on the stove top. If I do it again, I'll try in the microwave. Thanks LonghornMama Made for Beverage tag.

    Really great pudding and easy to make. I always double the recipe. I also like to eat it warm after the 20 minutes of sitting covered. Thanks for posting.

    This was great!!! I love swiss miss puddings, except that I'm allergic to modified food starch. This way I can have my pudding and eat it, too. I made this in the microwave the second time and it turned out great. Let cook 3-5 minutes, stir and continue to cook in these intervals until thick. Make sure you use a large enough bowl or you'll have tapioca goop all over your microwave!

    Very good pudding, I love the sweetened condensed milk in this. I used 1% milk and fat free condensed milk. Next time I want to try it with a vanilla bean. I will be making this often, thank for this recipe and the one you recommended I want to try that one as well.
