Sweet Potato Hash

A savory hash for people who think sweet potatoes are sweet enough already. Great as a side or brunch dish. Adapted from Cooking Light.

SERVES 4 , 3 -4 cup (change servings and units)

Directions

    In a large skillet, fry bacon pieces over med-high heat until browned.

    Add onion and peppers to skillet and saute until onions are golden to slightly browned.
  3. 3
    Add white wine or broth to pan to deglaze. Add sweet potatoes. Stir to combine. Cover and cook over medium heat until sweet potatoes are softened.

    Season with salt and Cajun seasoning.

    Serve warm.
