Almost like a powerbar, but better. Easy, nutritious, and they don't even taste "good for you" (all in moderation, of course!) You'll never do store-bought again... courtesy of a friend who got it through a friend, who got it from ElanasPantry.com - proof that good and healthy food is possible.... I am considering mixing in some cacao nibs next time for a little extra mmmmmm Cooking time = refrigeration time

SERVES 20 (change servings and units)

Ingredients

Directions

    Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor and pulse about 10 seconds.

    In a small sauce pan, melt coconut oil over very low heat. Remove from heat and add stevia, agave and vanilla into oil.

    Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste.

    Press mixture into an 8 x 8 glass baking dish, chilling in refrigerator until mixture hardens.
  5. 5
    Over a double boiler, in a suacepan, or in the microwave, melt chocolate. Spread over bars and refrigerate until chocolate hardens.

I don't know why the author of this recipe gave it a bad review. I found these to be pretty good. They took a bit of work, but any food that is good for you generally takes some work. I'm glad I found something to use up some of that flax seed that I had bought on sale. Thanks!
