Super Simple Sweet Potato Mash

My cousin and I came up with this simple recipe, when she overbaked the sweet potatoes for Thanksgiving Dinner. They tasted great! I don't really like sweet potatoes, but I took thirds on this one.

SERVES 12 , 12 servings (change servings and units)

    Overcook the sweet potatoes. Either bake them in foil, steam, roast (I'm sure roasting would give them an even nicer flavour) or bbq. Get them overcooked so they are really soft and you can mash them with a fork.

    Add applesauce (we used an Organics Applesauce snack cup. I think it might have been sweetened, so you may need to add some sugar to tast if you use unsweetened).

    Add Cinnamon.
  4. 4
    Mash it all together with a fork, or use a blender for a smoother texture and serve.

I didn't have any applesauce, and wasn't wanting to wait long enough to overcook the potatoes, but I ended up getting distracted and overcooking them anyway. They are so delicious overcooked. I had a tiny pool of carmalized sugar left at the bottom of the pan that I mixed in with the mashed potatoes. I'm thinking of baking apples with the potatoes next time and mixing them together. Thanks for the great idea.

    This was easy to make, and smelled good, but was quite wet. Maybe too much applesauce. Will work to get the ratio that's right for us.
