Steak and Mustard Cream Potatoes

From Super Food Ideas July 2008. Sounds delicious and the photo had me drooling. Don't know when I will get the chance to try it, so times are estimates. Will post any changes when I do.

SERVES 4 (change servings and units)

Ingredients

    Cook potatoes in a saucepan of boiling salted water over medium-high heat for 10 minutes or until tender.

    Drain, cool slightly.
  3. 3
    Transfer potatoes to a chopping board and using your palm gently press potatoes to flatten slightly.
  4. 4
    Meanwhile heat oil in a non-stick frying pan over medium-high heat and add bacon and cook stirring occasionally for about 5 minutes or until browned and crisp.

    Add garlic and cook for a further 1 minute.
  6. 6
    Transfer bacon and garlic to a large bowl.
  7. 7
    Return fry pan to a medium-high heat.

    Spray both sides of steak with oil and season with salt and pepper.

    Cook steaks for 4 to 5 minutes each side for medium or until cooked to your liking and then transfer to a plate and cover with foil to keep warm and rest for 5 minutes.

    Add potatoes, sour cream, mustard, chives and lemon juice to bacon mixture and toss gently to combine.

    Serve steaks with potato mixture.

This was lovely, a different way to enjoy potatoes! I didn't make the steak, but prepared the potatoes to accompany pies and vegetables for a midweek supper. I didn't have chives, so fried an onion along with the bacon mixture, we like onions! I also doubled the sauce ingredients, since we enjoy a lot of sauce. Very easy to do, we'll definitely be having this more often! I had just a little leftover, which I had for lunch today, delicious! Thanks, Pat!

    This looks like quite a complicated recipe until you (I) stop and realise it's just a warm potato salad that is great served with a steak. I had no chives so used spring (green) onions and I used rib eye cooked to suit us. I would do away with the directions to cook the steak and "sell" this as a GREAT warm potato salad.

    This is really tasty and good. I steamed my potatoes instead of boiling and used beef strips which I had marinated instead of steak. In step 10 I mixed all the sauce ingredients together and once combined then added the sauce to the potatoes. To top it all off I sprinkled some green onions over the top. The bacon is fabulous in this. Will definitely be making potatoes this way again soon. Thanks Pat.

    Sensational — wish I could give it 10 stars. I was feeding six, so upped the meat and potatoes accordingly. We love sauce, so I tripled the bacon and sour cream mixture. This was so easy to make and so delicious. I forgot the garlic, but that didn't matter one bit. The exchange students want it again soon. Me, too! Really divine.
