From a local community cookbook. Great side-dish.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Cook rice mix according to package directions.
  2. 2
    Press spinach between paper towels to remove excess moisture.
  3. 3
    Combine rice, spinach, and all remaining ingredients.
  4. 4
    Spoon into a lightly sprayed or greased shallow casserole dish or baking pan.
  5. 5
    Bake, uncovered, at 350F for 35 to 40 minutes, or until heated through.
  6. 6
    NOTE: You can assemble this casserole ahead of time and refrigerate.
  7. 7
    Let stand at room temperature for 30 minutes, then bake.

I used some leftover white rice, fresh spinach fried in leftover bacon grease, mozz and feta cheese.

    Very tasty. I had a package of mixed greens (turnip greens and kale) on hand so used that instead of the spinach. Also added a little more onion. The creaminess of the melted cheese really brought all the flavors together in a rich, but not too rich way.

    I love rice,especially Spanish rice,the spinach in this made it soooo good.Very excellent recipe.Thank you For sharing!

    We really enjoyed this recipe!! So creamy and wonderful. I was unsure about the rice and I ended up using a box of Uncle Ben's Wild Rice Blend and I did add the flavor packet. The only change i made was to use fresh (steamed) spinach instead of frozen. This recipe is awesome!!! Thanks for posting!
