Spam’s Blueberry Cheese Stuff

SPAM at it’s best. SPAM, Blueberries and cheese how can you go wrong. If you don’t tell anyone SPAM is in it, they would never know. This was my Mom’s recipe from 40 plus years ago. I don’t know where she got it from but all of us kids liked it and now my grandkids love it too. It is quick and easy. It can be used for any meal and as a snack, served warm or cold. Can be a casserole or made as any size muffins. This can easily be doubled.

SERVES 6 -8 , 12 muffins (change servings and units)

    Open and drain can of blueberries but don’t not rinse. Set aside.

    Mix Muffin mix, milk, oil and eggs in bowl with large spoon until smooth.

    Add and Mix in Shredded SPAM.
  4. 4
    Add and Mix in 3-4 C of Cheddar-Jack Cheese.
  5. 5
    Fold in drained blueberries. Try not to break too many of them.
  6. 6
    Put in greased 8 x 11 casserole dish. Bake at 350 for 40-45 minutes. Insert knife in middle and should come out clean.

    If you choose you can make them like you would regular muffins.

    As this cools Sprinkle about 2 C shredded cheddar cheese to top. It makes a gooey cheese topping the kids love.

    This dish can be served warm or cold.
