Bailey's Creamy Chocolate Pudding

I served this in wine glasses & topped with whipped cream for dessert on Valentine's Day! It was the first time that I made it but it certainly won't be the last. Use sweet, semi-sweet or dark bittersweet chocolate according to how sweet your tooth is. Timing doesn't include refrigeration.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine sugar & cornstarch in a heavy, medium saucepan.
  2. 2
    Add milk& whisk until dry ingredients are dissolved.
  3. 3
    Whisk in egg yolk & cream.
  4. 4
    Cook, over medium heat, stirring constantly, until the mixture comes to a full boil & thickens.
  5. 5
    Remove from heat & whisk in Bailey's.
  6. 6
    Add chocolate & whisk until melted& smooth.
  7. 7
    Pour pudding into ramekins or serving dishes.
  8. 8
    Let cool slightly & cover the tops with plastic wrap to prevent a skin from forming.
  9. 9
    Refrigerate until chilled- a minimum of 2 hours.
  10. 10
    To serve, garnish with chocolate curls or cocoa powder or whipped cream or all three!

My DH really liked this pudding..Was easy to make. I used 2% milk and some old hershey kisses that had been lying around,in the cupboard ...It had a nice texture and flavor..I will make this again..

    So easy to make and absolutely delicous. Made it for St Patrick's Day dinner and my guests absolutely LOVED it. So much so that I've been asked to make it again for an upcoming dinner party.

    Woohoo - took it off the second it thickened up and it is beautiful! My forearm muscles are much stronger thanks to this recipe. Too bad I knew nothing about making pudding the first time around. Thanks for the recipe!

    Very good, easy to make. I used skim milk and ff 1/2 & 1/2 and it still produced a thick and creamy product. Delicious.
