Grilled Chicken Breast with Spicy Pineapple Mango Salsa

Nice hot grilled chicken with ice cold Salsa is a great way to enjoy a hot summer night! Don't like chicken try this salsa with Chips, Tuna,Top a salad or whatever your heart desires.

SERVES 8 (change servings and units)

Ingredients

Chicken

Marinade

Salsa

Directions

    Place boneless chicken breast in a ziplock bag.
  2. 2
    Add marinade ingredients shaking well.
  3. 3
    Chill for 1/2 an hour.
  4. 4
    Rub grill with an oil.
  5. 5
    Heat the grill on high for 5 minutes.
  6. 6
    Place the chicken breast skin side down over the hot grill, reduce the heat to medium and grill for 5 minutes.

    Turn the chicken after the 5 minutes and grill another 5 minutes.

    Reduce the heat to medium low and finish cooking the chicken for another 5 minutes.

    Salsa---.

    Mix all ingredients and chill till ready to serve.

    Scoop salsa onto plate and top with half chicken breast.

    Eat UP!

Good, easy to make recipe. We marinated the chicken for about 1 1/2 hrs, but think it would be better with a longer marinating time. For the salsa, I subbed a jalapeno for the chipotle pepper, left out the red pepper and had to sub ground ginger for fresh. I served with rice and a salad for a nice different meal. Thanks for posting!

    I served this as a salad tonight with the chicken and salsa over a bed of leaf lettuce. Healthful and light- just right for a summer night!

    Great marinade and salsa. The salsa was good by itself. I used whole chicken breasts, and smoked them slowly with mesquite--the result was out of this world. Thanks for posting.
