Gorgonzola and Toasted Walnut Salad

This salad couldn't be simpler and will be a hit with blue cheese lovers. Pecans can be substituted for the walnuts. Cooking time is for the time it takes to toast the walnuts in a 325 degree oven for a few minutes.

SERVES 6 (change servings and units)

Ingredients

Dijon Vinaigrette

Directions

    In a large bowl, combine lettuce with cheese and walnuts.

    Combine and whisk together dressing ingredients.
  3. 3
    Toss salad with enough dressing to coat but avoid over-dressing.

    Serve.

I made this for Mother's Day and it was a big hit! Used mixed baby greens with herbs, but all else was true to the recipe. I put the dressing ingredients in a lidded jar and shook it really good. Worked great and made it easy to store what little was left. We really enjoyed this great salad and Mom bragged about it to everyone she talked to about dinner. I will be making this again, and often. The recipe was easy to follow, simple and delicious! Thanks!

    Great salad dressing...the salad was very good too. Made this for Christmas for those that were watching their waistlines and it was gone. We made extra dressing and used it for the duration of the week...we did half the EVOO. It was still flavorful. thanks Jude

    Fabulous!!!!! I added dried cranberries. I pan toasted the walnuts with brown sugar and butter.
