Scrambled Eggs with Tortillas

Years ago a friend of mine made eggs and tortillas for breakfast while I was visiting. I've been hooked ever since. My family doesn't ever want scrambled eggs. They always want eggs and tortillas. In fact, the only time I make plain scrambled eggs is when I am out of corn tortillas. It's a very simple recipe but it's very good.

SERVES 2 -3 (change servings and units)

    Crack the eggs into a bowl and add milk.
  2. 2
    Beat egg mixture with a fork until blended.
  3. 3
    In a skillet, heat 2 tbs oil over medium heat.
  4. 4
    Add tortilla triangles and lightly sprinkle with salt.
  5. 5
    Saute the tortillas for about two minutes
  6. 6
    Pour eggs mixture over tortillas, lightly sprinkle with more salt if desired.

    Gently fold egg and tortilla mixture with a spatula about every 30 seconds until eggs are scrambled and set (Do not over cook).

    Turn off heat.

    Sprinkle with cheddar cheese.
  10. 10
    Cover skillet with a lid for about two minutes or until the cheese has melted.

    Serve with fresh or prepared salsa.

The corn tortillas made a nice addition to scrambled eggs. Like the prev. reviewer, I topped with Tabasco Chipotle sauce. Thanks Beckas, for a fast delicious recipe! Roxygirl

    Thanks, beckas! DH and I were looking for something a little different for breakfast, so we tried this. YUM! I took the advice of some other reviewers and fried the tortillas until they were crispy. (They soften up again when you add the egg mixture.) I used Kraft Mexican Style Four Cheese that comes pre-grated in a bag. I wanted to use the rest of the bag up, so I probably had most of a cup of the mixture. DH doctored his up with Tabasco Chipotle sauce, but I ate mine plain, and we both enjoyed them. Super delicious!

    Becka! I never want plain old scrambled eggs again! These were delicious. The tortillas got nice and crispy, and made the eggs so much more interesting. They were perfect,and we'll be having these every sunday for breakfast from now on! We're tortilla junkies, lmbo. Thanks!

    This is a Mexican dish called "Migas" and I make this all the time. I do mix in fresh jalapenos, tomatoes and onions in with the tortillas, but other than that everything else is the same. YES, make sure the tortillas are crisp before mixing in eggs!!
