Artichoke Bread

This is just a wonderfully tasty way to start off any good meal. But if your like my family and can't get enough of artichokes this becomes the weekend snack

SERVES 12 (change servings and units)

Ingredients

Directions

    Preheat over to 350°F.
  2. 2
    Melt butter in a skillet over medium heat.
  3. 3
    Add garlic and sesame seeds.
  4. 4
    Sauté until lightly browned.
  5. 5
    Remove from heat and stir in artichoke, Monterey jack, parmesan and sour cream.
  6. 6
    Cut bread in half lengthwise.
  7. 7
    Scoop out center of each piece, leaving a 1 inch shell.
  8. 8
    Add approximately 1/2 of the removed bread pieces to the artichoke mixture.
  9. 9
    Stir to blend.
  10. 10
    Spoon artichoke mixture into french bread shells and sprinkle with cheddar cheese.

    Place on baking sheet and cover with foil.

    Bake for 25 minutes.

    Remove foil and bake 5 minutes more.

    Cool slightly and cut into slices.

    This was FABULOUS!! Beyond fabulous. It is like spin art dip without having to do the dipping!! I served this with potato soup...a great meal for a cold night!! We are having tons of company this weekend and will definitely be making this for our "Italian Night"...had to find a way to sneak in such a great, creative recipe! I thought the filling had GREAT flavor...and was so easy to throw together! We reheated the little bit that was left...and have to say that we loved it TWICE!! This will definitely be added to our "keeper" file...thanks so much for such a great recipe!

    You really don't need another review of this recipe, but I can't resist. Yep..it's fantastic. I had to make a special trip to the store for the sesame seeds, and then was disappointed when I couldn't really taste them. So, all of you that don't have sesame seeds on hand, don't fret...make this anyway. However, do make sure to use the foil as it will dry out without it.

    This was dinner last night, along with some chicken noodle soup I had already made. Everyone loved it. I was wondering whether it might be a nice hors d'oevre, cut in small slices, but there wasn't any left to see if I could cut it up small; it was devoured right from the oven. I followed the recipe almost exactly, but substituted Smart Balance for the butter, and used all low fat cheeses.
