Bread Pudding With Blueberries

Recipe #322181 | 50 min | 10 min prep | add private note

By: Quiltingqueen
Aug 29, 2008

This is a cross between my two favorite breakfast foods: french toast and blueberry muffins! This recipe has less sugar than a lot of other bread puddings I have seen which I love about it, and wheat bread works fine too. You can add the optional cinnamon sugar topping for an extra sugary crunch before baking, or it is great with cinnamon syrup or vanilla sauce over the top!

SERVES 4 , 1 pan (change servings and units)

Ingredients

Directions

  1. 1
With a whisk, combine half and half, eggs, sugar, cinnamon, salt, vanilla and almond extract in a large bowl.
  2. 2
Add bread cubes and stir until well coated.
  3. 3
    Fold in blueberries.
  4. 4
Pour mixture into a greased 8x8 pan.
  5. 5
Sprinkle 1/4 cup cinnamon sugar evenly over the top.
  6. 6
Bake at 350 for 35-40 minutes or until a knife inserted into the center comes out clean. (For firmer consistency, baking time may be a little longer).
  7. 7
Serve with cinnamon syrup or vanilla sauce.

It taste like french toast. It's really good. I made it yesterday evening and tasted it. This morning, I reheat my serving in the microwave cause I prefered it warm. I used Old English Spiced and Fruited Sugar for Apple Pies Etc! on top. It went well with it. I used frozen blueberries that I defrosted in the microwave for 5 minutes. But I didn't drain. I used whole milk instead of cream. The bread I used was a remaining of Guatemalan Challah Thanks Quiltingqueen. Made for Breakfast Photo Forum.

Super easy to make and sooo yummy! This will be my new favorite breakfast option. We didn't have any frozen blueberries, but did have a triple berry mix, and used that instead. It was delightful! I think I will try frozen sliced strawberries next time. We used whole grain bread, and I loved how the flavor came through.
