I made this the other day and it actually works! I was a little skeptical and worried the entire 2 1/2 hours until I could open the oven. It came out very juicy and tender. The only problem I had was the outside wasn't browned so I had to broil it a bit to give it some color. I will definitely make this again but I will try searing it first and then maybe adjust the time to compensate so it doesn't overcook.
