Mexican Chili Chicken & Rice

Very Quick and really yummy. Great served with jiffy cornbread!!!

SERVES 4 (change servings and units)

Ingredients

Directions

    Saute onion in nonstick skillet.
  2. 2
    Season chicken with salt and pepper- add to pan and saute until cooked through.
  3. 3
    Add beans, chili mix and rotel if using.
  4. 4
    Stir and simmer for 15 minutes (if mixture gets too thick, add 1Tb.of water as needed to thin out.).

    Serve over rice.
