These are Daves favourite sandwich and has them often as a quick weekend lunch. We always use the Japanese mayo. Also good with onion dip used instead of the mayo.

A STAPLE in my book---Dad used to show us kids how to pile on the chips to make one fantastic sandwich and I still do it til this day! DH always laughs when he see's me strategically placing as many chips as I can on my sandwich, but boy-oh-boy, that crunch along with the soft, savory fillings is just oh-so-good. And you're right- ANY chips work!

My sister and I used to eat our sandwiches like this when we were kids! LOVE them this way!! I used rye, corned beef, swiss; and chive and onion cream cheese on the top, mayo on the bottom. It was pure heaven!! Thanks Melis!!
