Quick and Easy Chicken in Cream Sauce

I used to make this constantly when I first learned to cook. It's a great little dish that takes no time or effort to prepare. I used to serve it with boiled rice or new potatoes and vegetables.

SERVES 2 (change servings and units)

    Slice the chicken into thin strips and toss in the seasoned cornflour.
  2. 2
    Heat the oil in a pan and fry the chicken pieces until golden brown.
  3. 3
    Add the mushrooms and cook until tender,about 2 minutes.
  4. 4
    Remove the chicken and mushrooms and keep warm.
  5. 5
    Pour the wine into the pan, bring it to the boil, and then add the cream. Cook for 1-2 minutes, until the sauce is thick and creamy. Season to taste.

    Pour the sauce over the chicken, sprinkle with fresh parsley and serve.

Thanks for sharing this recipe; it was another winner in my house. Sophisticated but still kid-friendly (my dd even ate the mushrooms). Very easy. Served with mashed potatoes on the side to soak up the extra sauce, yum.

    SO quick, SO easy and certainly extremely delicious. I added rosemary and thyme to the chicken and mushrooms when I removed them from the pan. I used a low-fat cream which I've always found in no way compromises the creaminess of a dish. I sprinkled parsley and slivered almonds over the sauce. When an extra ten minutes is available, when I'm making this again (which I'll certainly be doing), I think I'll probably also add minced onion and garlic in step three. Thank you for sharing this recipe, Noo! Just love scrumptious recipes that are quick to make! And recipes that can be varied to accommodate what's on hand and the whim of the moment! Made for 1-2-3 Hit Wonders.

    simple, good and totallllllly loved by company this evening. Quick and easy and so...yummy. I added some sliced red bell pepper for color, not that it needed it. tagged for 123, thanks for another Noo keeper.
