Salmon in Parchment Paper

I recently got home from my fishing trip to Alaska and came home with 39 lbs. of Silver Salmon. Let the recipe testing begin. This took minutes to prep and only about 30 minutes to cook. It was light and very tasty.

SERVES 2 (change servings and units)

    Set your oven to 350. While it is heating up place a piece of parchment big enough for your fish on a cookie sheet.
  2. 2
    Place the fish on the parchment and then slice your butter into small pads and place on fish. Slice the lemon and place a 2-3 plices on fish and then lay dill on top.

    close up the parchment and place in oven.
  4. 4
    Cook for 25-30 minutes.

This was very good, and gets points for ease! I was able to throw this together just about as quickly as I could rip the sheet of parchment off the roll and slice the lemon. 5 minutes prep is no joke. The flavor is mild, and was pleasing to my whole family, including kids. I added salt and pepper, and next time I might add some garlic or onion, too, just to round out the flavors more. But excellent as is. I might also add that I made a much larger filet, which fed 6 people tonight. Thanks, Gone Fishin! Made for PAC Fall 2008.
