Such a clever and simple idea! I immediately went out and bought more noodles and corn so that I can make them again! Mine made about a dozen single serving pancakes, a super snack or lunch box treat! (If you can keep them from being eaten before then!) I need to work on my presentation, but that was just me. definitely versatile, I can see how you could happily jazz these up in all sorts of ways. Super recipe, thanks, Bluemoon!

5+ stars!!!! Every now and then you come across a recipe that blows you away. This did just that for Buddha and I. WOW!!!! (and I halved the recipe, but will double it next time!) This is so easy to make. Ok, it does take more than 2 minutes, but it's a pretty fast recipe. Made as directed but used chicken flavored Ramen noodles (same thing really) which I cooked then cut up using scissors (makes it so easy). I substituted dried onion flakes for the chives and added some salt and pepper. The batter was pretty wet but my fears were quickly dissolved once they started frying up. The directions are spot on, but be careful as frying corn spatters. We made 3 very large pancakes, topped them with a dollop of sour cream and we want MORE!!! This is an award winning recipe and thank you so much for posting it!!!!

What a wonderfully simple recipe!! This was very well received as a lunch snack today,by my two children (aged 3 and 1),and I loved them too!! So quick and easy to whip up.I recommend that you do break the noodles up quite small (mine weren't!!) and also watch out for the sweetcorn when you fry them.I had a couple launch themselves out of the pan at me!! We served ours with some chilli sauce to dip into (we like Linghams).A winner in our house-thanks for posting.Made for Zaartag.
