Kickin' Creamy Chicken Stew in a Slow Cooker

For this recipe I use frozen chicken tenders or chicken breasts (yes, frozen) in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want. This will make 10 "healthy" servings (thats 1/2 a chicken breast) so judge your servings on your families appitite.

    Place frozen chicken breasts or tenders in bottom of slow cooker.

    Add remaining ingredients except cream cheese.
  3. 3
    Cook on high for 4-5 hours (less if chicken isn't frozen).

    At this point I remove about 1/2 the liquid because I like my sauce thick, like a stew.

    You can leave all the liquid if you want a soup.

    Add cream cheese, cook on warm setting for 30 minutes, then stir.

    This can be served over rice or wrapped in flour tortillas

    One healthy serving is 1/2 a breast or 2 large chicken tenders.

This was really deeeelish! I followed the recipe exactly and served it over rice....it was very flavorful and we ate up every bite. A nice, easy dish to make on a cold day! We look forward to making this again!

    This is a great, easy-to-make and hearty meal with just enough spice. I used Rotel tomatoes and added 1 can of V-8. I also shredded the chicken, so we had it more like a hearty stew. My dh had 3 bowls of this--raving it about it with each bowlful! We will be having this often!

    OH MY GOODNESS! This will be on my family's favorite list! And low in fat to boot. I fooled with the recipe a bit, but for no less stars. After reading the directions, I thought removing liquid might not be in my time-frame. So here's what I did: I cut the chicken breasts into good sized cubes, drained and rinsed the beans, which is just something I always do. Used canned corn and drained it and added one can Ro-Tel undrained. I used a medium spicy salsa, just a store brand. And I had the soft lowfat cream cheese. Served on brown rice. It was only a bit soupy, but we like it that way so it soaks into the rice. THIS RECIPE HAS A FLAVOR PUNCH! Yummy sounds from me, husband and picky daughter! This is such a keeper Annacia! Thanks for posting this recipe!

    Yummy! This recipe is wonderful. Nice and filling. Not too spicy, but full of flavour! It was so simple to make and made dinner a breeze. My husband even raved about it - and for him to give a recipe 5 stars without hesitation says alot (being the food critic he is lol). We served it over rice and are looking forward to the leftovers.
