Watermelon Cucumber Salad

This is a recipe my mom gave me. Unique and tasty!

SERVES 12 (change servings and units)

    Combine vinegar, sugar, and red pepper in a saucepan. Bring to a boil; boil one minute. (This can be made ahead and stored in the refrigerator for up to two weeks.)
  2. 2
    slice cucumbers and toss with 1/2 teaspoons salt in a large bowl. Transfer to a colander and let stand 30 minutes. Pat dry on paper towels. Just before serving, toss watermelon with 1/2 tsp salt in a large bowl. Add cucumbers and pepper syrup.
