This is by far my favorite "main dish" casserole I made this year using some of my overabundance of squash from my first vegetable garden. It's creamy, delicious and, best of all, easy.

SERVES 6 , 6 Servings (change servings and units)

Ingredients

Directions

  1. 1
Slice the squashes and dice the mushroom and onion.
  2. 2
Combine the Alfredo sauce, pasta, crab, onions, mushrooms, squash, zucchini, parsley and pepper flakes in a large bowl and toss to coat.
  3. 3
Transfer mixture to a greased 13x9x2 baking dish and cover with cheese.
  4. 4
Cover and bake at 325°F for 35 minutes.
  5. 5
Toss bread crumbs and butter and sprinkle over casserole.
  6. 6
Bake uncovered an additional 5 to 10 minutes to brown.

Have made this recipe twice so far and my family loves it! It makes a really easy frozen dinner too, which is convienient for a family on the go. The first time I made this I did exactly as recipe stated and it was really good. The second time I made this I did not have mozzarella cheese on hand, so I substituted a montery jack/colby blend. I also only added yellow squash. It was awesome! Thanks for sharing this recipe-I will be glad to have it for the upcoming cold winter nights!
