Chicken Chow Mein Casserole

I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Saute onion and celery in butter.
  2. 2
    Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
  3. 3
    Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.
  4. 4
    Bake at 350 for 20 minutes.

I gave this 4 stars since my DD gave it a "3" and the rest of the family gave it a "5" Very easy to make and a great way to use up left over chicken. I made as directed, but added water chestnuts cause we love the crunch of them. I may have added a few extra drops of hot sauce. Thanks Alisa for sharing!

    I bought soft chow mein noodles, but I think this recipe wants the hard chow mein noodles. So rather than baking in the oven, I just mixed in the soft noodles and served. It was quite yummy and I would definitely do it again!

    Delicious! Simply delicious! DH who doesn't usually have seconds came back for more! I followed the directions exactly - except doubled everything for a 9x13 pan. We served this over rice and it was so tasty! DH thought water chestnuts would be good to add and as we were talking - I thought those little baby corns would be yummy as well as mushrooms. Yes - we will make this again - a lot!

    Made it tonight and it just disappeared! It was yummy. Since I really don't like celery, I used water chestnuts instead. I also added some slivered carrots and diced mushrooms. We certainly will have this again.
