Essence of Summer * Raspberry-Honey

Our raspberry patch and our bees get the credit for this one! Perfect on your English muffins, scones, toast and to use as a glaze for chicken, pork or ham. Vary the spices and you'll have a whole different "essence." Let me know your favorites, please...we're doing a market survey and will be selling this to our poultry customers this summer. Thanks!
6 cups
Ingredients
- 1 quart honey (light)
- 2 cups raspberry jam
- 1 teaspoon cinnamon (see below)
Directions

Combine honey, jam and cinnamon (don't stir too vigorously or you'll incorporate air into the mixture and you DO NOT want to do that).2
Store in pretty jars (give as gifts); keep in a cool, dark place.3
Try substituting any of these different spices to come up with a different seasonal "essence" such as.4
SPRING ESSENCE: lavendar buds (organic, you don't want to eat any sprays!).5
SUMMER ESSENCE: coriander, chive buds.6
AUTUMN ESSENCE: allspice, pumpkin pie spice, cinnamon.7
WINTER ESSENCE: cinnamon, nutmeg.8
***On the FLIP side: How about a completely different berry or jam? Like blueberry, boysenberry, orange marmalade, etc.***.9

What a great idea for those half eaten jars of jam at the back of the fridge. I used plum & raspberry jam with the cinnamon. I nuked my honey for about 15 secs to make it easier to mix, can't wait to have this on my toast in the morning. A great gift idea too!

Made up a smaller quantity for my daughters to have on their toast for breakfast. We didn't have raspberry jam but instread used blackberry and it worked well. Both enjoyed their breakfast. As suggested by Debber, this would be perfect served on scones with cream or on damper. Thanks for posting.

This sounds good and I plan to try. Upon reading the different suggestions for Essence,I think if you teamed up Orange Marmalade to go with the Autumn Essence suggestions and Red Currant for the Winter Essence it might be a nice pairing. Last year I gave flavored butters (See Blueberry Butter Blueberry Butter or 202008 Apricot butter (also Strawberry 202012,Raspberry 202014 and Cherry 202010) for Christmas which were a huge hit,this year I may have to try your honey listing. Thanks for posting!!!
