Irish Mashed Potatoes With Cabbage

This is typically called Champ, this one has some added ingredients! Adapted from Cooking Light.

SERVES 6 (change servings and units)

    Preheat oven to 350°.
  2. 2
    Combine first 4 ingredients in a large stockpot; cover with water. Bring to a boil; cover, reduce heat, and simmer 30 minutes. Drain.

    Return potato mixture to pan. Add cream cheese, milk, sour cream, salt and pepper; mash with a potato masher. Spoon potato mixture into a 1 1/2-quart casserole coated with cooking spray. Cover and bake at 350° for 45 minutes or until thoroughly heated.

    Note: This can be made a day ahead; just cool, cover, and refrigerate. Reheat in oven or microwave.

This is amazing! Yummy. I wanted to make a casserole for my husband since I work late and am never home when he needs to fix dinner. I wanted to make both potatoes and cabbage and wondered if there was a casserole that combined both. This was the perfect answer - delicious!! Thank you!

    This was magical! I was a bit afraid that my family wouldn't eat it, because of the cabbage. I mashed it really well, used fat free ingredients, but all of your measurements. Turned out so fluffy and flavorful! I served these potatoes with chicken slow cooked in french onion soup, which made for a great gravy on the top. Yum! Thanks for posting! You have some spectacular recipes!

    Very very yummy, I used red potatoes, and everything else I followed as per recipe ....ohhh so yummy. Even the non cabbage eaters like this one. I could eat a plate of this just on its own, it was so delicious!!! Another for my list ... Thanks Sharon 123 for a fantastic recipe!!!

    Yummy creamy comfort food! The garlic gave it a great flavor and the cabbage added just a little crunch. I made this exactly as written and will make it again. Thanx for sharing.
