Directions

    Mix water, vinegar and sugar in a bowl until the sugar has dissolved.

    Mix in the cucumber, ginger and onion.

    Refrigerate for several hours until ready to serve.

Delicious. The ginger flavor really got into the onion. Used splenda and the sweetness offset the tartness of the vinegar, though I might cut down on the splenda next time as it was a tad sweet. Can use with more than one cucumber.. Chunked the cucumber. This was great even the next day. Spooned a bit of the dressing over tomato wedges very good.

    Really a refreshing salad, doubled the ginger - love ginger, made it the previous night, it was a real hit at the picnic - so easy, so good THANKS

    On Elmo's reccomendation in a thread, I decided to try these. I chose to grate my ginger and to replace the sugar with Splenda using the equivalent of 3/4 cup. Let the sit about 6 hours and the results were crispy and flavorful.

    How about 10 stars? I had to add another cuke because everyone kept sampling the ones marinating!!! DEEEELICIOUS!!!! Thank you! This will be served to many this summer. So fast, so easy. I cut the ginger into matchsticks.
