Peppermint Candy Cane Bark

Every Christmas my friends and family look forward to this in the cookie tins I make for all of them. They get very upset when I do not make this. It is so easy to make. However, you will want to give them away as soon as possible because they are very addicting.

SERVES 6 , 1 cookie sheet (change servings and units)

Ingredients

    Melt white chocolate either in a double boiler or in a bowl over a pot of boiling water.
  2. 2
    Stir in crushed candy cane and peppermint flavoring into melted white chocolate.
  3. 3
    Line a 11x17" baking pan with wax paper.
  4. 4
    Pour and spread chocolate mixture onto wax paper.
  5. 5
    Chill until firm and break into pieces.
  6. 6
    Refrigerate until ready to serve.

This is one of my favorite Christmas candies. I have made it for several years using just white chocolate & candy canes, but the addition of the peppermint extract really improved it.

    I used white melting discs from the bulk food section and added a few drops of red food coloring to make the bark pink. Stirred in the big chunks of candy cane and sprinkled the more powdery bits on top. Super EASY, pretty, excellent addition to my holiday cookie tins. I will definitely do this again next year! FYI...one box of 12 candy canes for me was 6 ounces.

    I used 1 lb regular choc. chips and 1 lb white, and mixed half the extract with each (actually, I forgot to mix the extract in the white, but you can't tell.) I layered the chocolate on the bottom and then mixed the candy cames with the white and layered on top. I reserved some candy canes to decorate the top.

    I made this last year with Giaredelli white chocolate and put into mini muffin cups. (the tiny ones They were a big hit!
