Kittencal's Balsamic Vinaigrette

This dressing goes with my Kittencal's Spinach Salad With Balsamic Honey-Dijon Vinaigrette You may double this recipe if desired. Plan ahead this needs to chill for a minimum of 2 hours before using. This is a great dressing

3/4 cup (approx) (change servings and units)

    In a bowl whisk together garlic, salt, Dijon, honey and balsamic vinegar.

    Add in olive oil in a slow steady stream until emulsified.
  3. 3
    Season with more salt if needed and black pepper.
  4. 4
    Chill for a minimum of 2 hours before using.

Great recipe !!! I threw in all the ingredients except the olive oil into the food processor, and as I was pulsing the ingredients, I slowly drizzled in the olive oil (helps emulsify). I read the reviews before hand, and agree that the additional 2 tbsps of olive oil were not necessary. I did try to cut back on the honey, but it was too tart, so added all 4 tsps of the honey (well worth it). I added the dressing to a great salad consisting of mesclun greens, red onions, caramelized pecans, dried cranberries and crumbled gorgonzola - absolutely DIVINE!!! You must try it. Thank you, Kittencal.

    Great and easy dressing. After trying some of your salad dressing recipes Kitten I don't know why I ever bought dressing before. I made mine in a mini food processor which mixed the mustard in a little more and made it look creamier, however it was still a very light dressing. I didn't add the extra 2 tablespoons of olive oil because I forgot, but I also don't think it really needed it. I also added about a tablespoon more mustard and a 5th teaspoon of honey. I served this over a cranberry, walnut, and bleu cheese salad and it complimented it very well. Thanks again Kitten!

    This was fabulous - and so easy. However, I will add less olive oil the next time (it doesn't need the additional 2 T.) It is just a really good combination of ingredients, and I will definitely add this to my dressing rotation!

    Love this salad dressing. It is simple to make and we love the flavour. I have used a lighter olive oil, but prefer the regular olive oil for richness. I haven't always chilled it for minimum 2 hours before using because that would involve planning and organizational skills which I lack some days. None the less, terrific under 2 hr chilling and terrific over 2 hrs.
