I love zucchini. I also love having lots of different ways to prepare it. This is a simple one.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
    Slice zucchini in 1/8 to 1/4 inch slices.
  2. 2
    Toss with melted butter and oregano.
  3. 3
    Arrange in a single layer on a greased baking sheet.
  4. 4
    Sprinkle with parmesan cheese.
  5. 5
    Bake, uncovered, at 350 degrees F for 35-40 minutes.
  6. 6
    Season to taste with salt and pepper.

This was a great way to eat zucchini. I used a little more seasonings, like garlic powder and added just a small amount of bread crumbs sprinkled on before the cheese. It was really good and I will make this again.

    These were really good! I was in the mood for a low-cal/diet friendly snack and I found it! I sliced up one zucchini, sprayed the slices with EVOO, and sprinkled with oregano and parm. I found that I enjoyed the crunchier ones best, so next time I will broil at the end.

    I thought this recipe was fantastic! My husband thought they should be a little more crunchy, so next time I will either increase the time, or broil for a few minutes at the end to give them a bit more crunch. Thank you!

    This is a great recipe for those who do not like zucchini! I followed the recipe except that I used italian seasoning rather than just oregano. It was very tasty! I had a bit too much butter and they were a tiny bit soggy, so it may take a time or two to get that right considering the zucchini sizes vary. Overall good recipe.
