Mashed Red Potatoes With Garlic And Parmesan

Ingredients
- 2 cups parmesan cheese
- 1 (10 ounce) box frozen spinach, thawed
- 1 (14 ounce) can artichoke hearts, drained
- 2/3 cup sour cream
- 1 cup cream cheese
- 1/3 cup mayonnaise
- 2 teaspoons garlic, minced
Directions

Preheat oven to 375°F.2
Mix together Parmesan cheese, spinach, and artichoke hearts.3
Combine remaining ingredients and mix with spinach mixture.4
Bake for 20-30 minutes.5
Serve with crackers or toasted bread.

Like this needs another review...however, I'm reviewing anyway! I used a 2 cup package of shredded italian blend cheese instead of just parmesan. I also used a 16 oz pkg of spinach because I love spinach and wanted to make sure the flavor was really there. I also used reduced fat cream cheese and sour cream with great results. I served this with garlic bagel chips and blue corn chips. Delicious.

This was AMAZING! I work at Old Chicago, and one of their most popular appetizers is the Hot Spinach Artichoke Dip. I have to say, this was just as good if not better than the restaurant! I used fat free sour cream, light cream cheese and 2 t. garlic powder, and served it with toasted garlic bread and veggies. Dee-lish!

This dip was a big hit with my friends! I substituted mushrooms for artichoke hearts and it was absolutely delicous. Great heated up the next day too! YUM...
